The bread is naturally low in fat and contains substantial very high-quality, complete vegetable protein. It is also rich in fiber and boasts plentiful vitamins and minerals – and all this with absolutely no flour used as an ingredient.
With a glycemic index of only 35, each muffin has a glycemic load of only about 9 – acceptable by any standards.
Each Ezekiel English muffin also provides about 26 grams of available carbohydrate (with no sugar), 8 grams of protein, over 5 grams of dietary fiber, and only 2 grams of fat (zero added trans fat or cholesterol).
Availability and Use
You can likely buy frozen Ezekiel breads in some tucked away corner of your local supermarket. If not, try your local health food store.
These products are delivered and stored at the grocery in a frozen condition, and that’s how they should be stored at home except for immediate use. If you prefer, they can be safely thawed and refrigerated for 5 days or so.
I typically store my muffins frozen until I’m ready to use one. I then pop a whole English muffin in the microwave and zap it on the lowest power setting for about 90 seconds, then slice in two and toast. Nothing could be easier.
